Ingredients:
1 small red chilli (seeded and diced (or 2 teaspoons red pepper flakes))
1 shallot (chopped)
½ c chopped parsley (flat-leaf parsley)
4 cloves garlic (chopped)
3 tbsp red wine vinegar
⅔ c good-quality extra-virgin olive oil
1 tsp dried oregano
1 tsp salt
½ tsp fresh ground black pepper
Directions:
In a food processor, add the shallot, garlic, chopped parsley, red wine vinegar, oregano, salt, pepper, and red chilli. Pulse until well combined and processed.
Move the processed mixture into a mixing bowl, then add extra-virgin olive oil. Stir until well blended.
Leave the sauce at room temperature for at least 15 minutes.
Serve with steak and enjoy!
Notes:
You can use this sauce as a marinade.
Make sure to discard the stems of the parsley before pulsing in the food processor.
Make sure to use fresh garlic for this recipe.
You may not add shallot if you wish.
Make sure to include dried oregano for an authentic Chimichurri sauce.
