The Best Banana Egg Cakes – Gâteaux aux œufs de Banane – Cake recipe

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 teaspoon vanilla extract (optional)
  • Oil or butter for greasing the pan

Instructions:

  1. Mash the bananas in a mixing bowl.
  2. Add the eggs and whisk until well combined.
  3. Add the flour, baking powder, salt, cinnamon, and vanilla extract (if using) to the bowl, and whisk until the batter is smooth.
  4. Heat a non-stick skillet over medium heat and add a little oil or butter to grease the pan.
  5. Spoon about 1/4 cup of the batter onto the skillet for each cake.
  6. Cook the cakes for 2-3 minutes on each side or until golden brown and cooked through.
  7. Serve the cakes warm with your favorite toppings, such as fresh fruit, maple syrup, honey, or whipped cream.
