The Best Banana Egg Cakes – Gâteaux aux œufs de Banane – Cake recipe
Ingredients:
- 2 ripe bananas
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon (optional)
- 1/4 teaspoon vanilla extract (optional)
- Oil or butter for greasing the pan
Instructions:
- Mash the bananas in a mixing bowl.
- Add the eggs and whisk until well combined.
- Add the flour, baking powder, salt, cinnamon, and vanilla extract (if using) to the bowl, and whisk until the batter is smooth.
- Heat a non-stick skillet over medium heat and add a little oil or butter to grease the pan.
- Spoon about 1/4 cup of the batter onto the skillet for each cake.
