Healthy elderberry syrup, without sugar and preservatives

Elderberry is one of the most commonly used medicinal plants in the world.

Even today, many people still collect elderflower and use it as a natural remedy for many different ailments.

Medicinal elderberry syrup without sugar

A great, very tasty recipe for sugar-free elderberry syrup.

It is excellent not only for flavoring lemonades, sweets and desserts.

For medicinal elderberry syrup we need:

about 35 elderflowers

1.5 liters of boiled and cooled water

900 ml. agave syrup

6 lemons, organic quality if possible

Preparation:

Collect elderflowers in places that are not dusty – ideally away from roads and on a sunny day.

We pick the elderflowers by hand, and in a large container we cut only the flowers without the green parts.

Pour water over the flowers so that they are submerged, add slices of lemons and cover the bowl with cheesecloth or a clean cloth.

If you don’t have natural lemons, remove the peels before adding them to the flowers

Leave for at least 24 hours in a cool, dark place.

Then strain the base and squeeze all the juice from the flowers and lemons and pour them into the pot.

Bring mixture and agave syrup to a boil over low heat and simmer for 5 minutes.

Finally, add the lemon juice from the remaining lemons (strain through a strainer)

Then carefully pour the syrup into warm sterilized containers.

Close tightly and let them cool completely wrapped in a blanket.

Store in a cool, dark place, and after opening store in the refrigerator.

You don’t have to use elderberry syrup just for lemonades, it’s also an excellent sweetener for cakes and baked desserts.

The second recipe for elderberry syrup without boiling and sugar

This syrup does not contain classic white crystal sugar, but a birch sugar called Xylitol.

It is not only healthier, but also fantastically delicious.

Lasts months even without preservatives. This is a really healthy elderberry syrup!

We need:

40-50 large elderflowers

3 liter pot

1 whole lemon + 2 squeezed lemons

Sweetener: We recommend Xylitol (birch sugar) 300-500g

1 teaspoon of citric acid

Preparation:

We put the elderflowers in the container without rinsing them (we only leave them in the sun for a while so that the bugs come out).

Dissolve the sweetener and citric acid in 3 liters of water and cut a lemon.

The elderflowers are poured with this liquid so that the flowers are completely covered. 

Add lemon juice and let stand overnight. 

The next day, drain and simply store in a container. The syrup will last for months even without preservatives.

Of course, this syrup does not have the same consistency as the classic sugar syrup that is boiled. 

But the taste is much cleaner and gentler. It is thousands of times healthier than the classic granulated sugar syrup.
