Aubergines tastier than meat! Wow your guests with this wonderful recipe
If you have aubergines in the pantry and you don’t know how to use them, you can make very tasty rolls that will not make you regret the meat at all.
Stringy and tasty, these aubergine rolls have a preparation that does not hide pitfalls. They will fill everyone’s stomach and melt in your mouth after the first bite.
In the family you will not do without it.
Eggplant rolls: ingredients.
As ingredients we must use:
- 300 g of potatoes
- Gouda cheese just enough
- 6 or 7 peppers
- 200 g of butter
- 600 g of aubergines
- 3 red onions
- 30ml of olive oil
- Tomatoes and cherry tomatoes as required
- 2 cloves of garlic
- Parsley just enough
- Pepper just enough
- Salt just enough
- Paprika sweet enough
- Oregano as needed
Preparation
Remove both ends of the aubergines and then cut them into slices about 1 cm thick.
Then we put aside and in a flat plate we pour the olive oil, salt, paprika, pepper, oregano, grated garlic and mix well.
Then we place our aubergines on the pan and brush them with the mixture we have just made.
We bake for 25 minutes at 180 degrees.
In the meantime, place the peppers on a baking sheet, wet them with a drizzle of oil and bake them at 180 degrees for about half an hour.
Then we place a frying pan with high edges on a stove and place the sliced onions and the oil inside and then let it cook for about 5 minutes over medium heat. When the onions are golden, add a little salt and transfer them to a plate.
Then boil the potatoes, remove the peel and mash them with a fork and then add the butter, pepper, salt and mix well.
Add our onions to the mixture and continue mixing to then add the chopped parsley.
At this point we recover the peppers, remove the skin with our hands, when they are cold, and then cut them into slices.
Next we take a slice of eggplant. We add a slice of peppers and a spoonful of the mixture we have prepared on top. Roll the aubergine up on itself to create a roll and repeat the same operations until all the ingredients are used up.
We transfer the rolls into a previously oiled baking dish and in which we have created a bed of tomatoes cut into slices and seasoned with salt. On the rolls, add the result of 2 cherry tomatoes previously cooked in a pan together with salt, pepper and oil.
Arrange some slices of Gouda cheese and 7 or 8 halved cherry tomatoes on top.
We bake for 25 to 30 minutes at 180 degrees.
